Ingredients for making rice pudding
Rice – 1 bowl
Milk – 1 liter
Sugar – 1.5 cup (as per taste)
cardamom powder – 1 tsp
Cashew – 10-12
Almonds – 10-12
Pistachios – 10-12

Rice pudding recipe
If you want to make rice kheer on Paush Purnima, first clean and wash the rice. Now soak the rice in water for 1 hour so that the rice becomes a little soft. Meanwhile, cut cashews, almonds and pistachios into fine pieces. After 1 hour drain the water from the rice and wash them once again with clean water. After this, grind the rice coarsely with the help of a mixer. You can use them in kheer even without grinding them.

Now take a wide deep bottomed utensil and put milk in it and heat it on medium flame. When the milk starts boiling after heating, add rice to it and let it cook. Now reduce the flame and cook the milk rice for 15 minutes. Keep stirring the kheer in between with the help of a big spoon. Now add sugar as per taste and mix it well with a spoon.

Now once again cook the kheer for 5 more minutes. After this, add finely chopped dry fruits (cashews, pistachios, almonds) to it and let it cook for some more time. When the kheer starts getting thick, turn off the gas. Your rice kheer is ready. It can be eaten hot or chilled in the fridge.
